Beef Enchiladas with Red Sauce
The base of this recipe came from Our Best Bites, but of course I have made my own modifications. I usually don't have Enchilada Sauce on hand so I've made my own that my family really enjoys. Of course that recipe is also included. Even my 3 year old asks for seconds of this dinner.
| 1 | lb | Ground Beef |
| 1 | Tbsp | Onion - Minced |
| 1 | Tbsp | garlic |
| 1 | Green Pepper | |
| 1 | Tbsp | chili powder |
| 1/2 | tsp | cumin |
| 1/2 | tsp | Oregano |
| 1/2 | tsp | Pepper |
| 1 | tsp | Salt |
Dice green pepper. Brown ground beef with spices, onion, and green pepper. Remove from heat.
| 1 | c | sour cream |
| 2 | tsp | Lime Juice |
| 1 | c | cheddar cheese, grated |
| 8 | oz | Tomato Sauce |
Mix with ground beef mixture.
| 8 | tortilla -flour |
Fill 8 tortillas with mixture. (about 1/2 c. mixture per tortilla). Roll and place in a 9x13 pan.

| 2 | Tbsp | chili powder |
| 8 | oz | Tomato Sauce |
| 1 1/2 | c | water |
| 1/4 | tsp | cumin |
| 1/4 | tsp | Garlic Powder |
| 1/4 | tsp | Onion Powder |
| 1 | tsp | Salt |
Mix together in skillet and heat over medium heat until slightly thickened (approximately 10 minutes)
| 2 | c | cheddar cheese, grated |
Top rolled tortillas with enchilada sauce and cheese. Bake at 350* for 20-25 minutes, or until cheese is melted and bubbly.
To add a little more spice, add more chili powder to the Enchilada sauce (I cut the original amount from the recipe in half). You could also add Hot Sauce to give it a little zing.
